Accademia Italiana della Cucina – The Italian Academy of Cuisine

Accademia Italiana della Cucina Established in 1953, by a group of friends united at the dinner table, the Accademia Italiana della Cucina from the start has aimed at safeguarding the traditions of Italian Cuisine together with the culture of civilisation at the table, which is lively and actively expressed throughout the entire Nation of Italy.

In 2009, the Accademia published its first book after 50 years of research, “La Cucina – The regional cooking of Italy,” which brings together the classic authentic recipes collected in every province, town and village of Italy. The book uncovers the origins of over 2000 iconic dishes and historical facts on culinary wonders that provide fascinating views into the folk culture of Italy.


ALMA is the world’s leading international educational and training centre for Italian Cuisine. ALMA educates chefs and sommeliers from all around the world, forming professionals of Italian Cuisine with training programs at the highest level, executed by the world’s leading teachers of Italian Cuisine and wine.

Academia Barilla aims to defend and safeguard Italian food products made by reputable artisans and typical DOP and IGP products against poor quality imitations by:

  • Promoting and spreading the understanding of these products and their role in traditional, regional Italian Cuisine
  • Developing and supporting Italian Cuisine by investing into the restaurant industry’s understanding and application of Italian culinary philosophies
